
2 Hour Tender
Turkey Deli Meat


Wet Ingredients:
—1 pkg. (14 oz.) extra firm tofu with the liquid (no need to drain or press)
—4 tbs vegan chx bullion paste/powder (use less or more depending on how strong a flavor your seasoning has)
—1 tsp black pepper
—1 tbs onion powder
—1 tbs garlic powder
—1 tbs nutritional yeast (optional)
—1 tbs MSG or mushroom powder
—1 tsp powdered thyme
—1 tsp powdered sage
—1 tbs sugar (optional)
—1 tbs liquid smoke
—2 tbs agave
—1 cup plant milk (I used oat)
—1 tbs baking powder
Dry Ingredient:
—3 cups vital wheat gluten (VWG)
(Optional Ingredients:
—butter and agave, or seasonings of choice for the crust)
Instructions:
1. Add all the wet ingredients to a food processor (or blender if you do not have a processor) and process until the tofu has liquified.
2. Add 3 cups of vital wheat gluten (VWG) to the wet mixture and process until it comes together (you can do this in batches for smaller processors or blenders), or you can knead this by hand for 5-10 min.
3. Text the texture. It should be soft and stretchy and it should hold together as a cohesive dough, and you should see some gluten formation when you stretch it.
4. Add the dough to a ham press. Use a small spatula or the back of a butter knife to release the air from the bottom of the press to allow the dough to reach the bottom. You will not need to use the spring mechanism for this recipe. If you do not have a ham press, wrap the dough very tightly in foil instead.
5. Pressure cook for one hour on high with one cup of water. If you do not have a pressure cooker, steam or bake it instead until the internal temperature reaches 160 degrees Fahrenheit/71 degrees Celsius.
6. Let the roast cool a bit (or use oven mitts to make this quicker)—just beware of any steam), and then remove it from the press or foil. If using a press, you will need to remove any excess dough that escaped from the top of the press to open it.
7. (Optional:) Sear the outside of the roast in butter and agave (or any seasonings of choice) to make a delicious, crispy uniform crust.
8. Slice.
