This recipe is a great way to use up any seitan batches that didn’t turn out quite the way you wanted, but it can be made with any vegan protein you prefer, too. 💚

Ingredients:
—3 cups mince (you can use cooked lentils, beans, mushrooms, walnuts, seitan, etc.)
—1 cup panko breadcrumbs
—2 tbs vegan beef seasoning
—1 tbs onion powder
—1 tbs garlic powder
—1/2 tbs pepper
—salt to taste (if using a batch of seitan that didn’t turn out, you may not need to add any extra salt)
—1 tbs nutritional yeast (optional)
—1 tbs Italian blend seasoning
—1 tbs oregano
—pinch of cayenne pepper or red pepper flakes (optional)
—1 tbs mustard (optional)
—1/4 cup tomato paste (or substitute ketchup)
—2 tbs olive oil
—1 cup flour
—1 cup water

Note: adjust the seasonings to your taste. Depending on which type of mince you’re starting with, you may want more or less seasonings.

Instructions:
1. Mince your protein and make sure you have at least three cups of mince to use.
2. Add all the ingredients together in a bowl and combine well. You should end up with a very sticky mixture.
4. Shape your meatballs by hand.
5. Heat some neutral oil in a pan over medium heat. Add the meatballs and sauté until browned all over and the flour has completely cooked through (this will take around 20 minutes)
6. Use the meatballs immediately in any of your favorite recipes, or cool and freeze for later use.

Enjoy!
